recipe so that it could be Kosher for Passover set me to find out why.
About.com came up with my first answer via Ask the Rabbi, Rabbi Shraga Simmons in Jerusalem. He explains the laws of the Torah forbid certain grains be eaten or possessed during passover. There are a couple of flours that can technically be eaten, but to be safe, most Kosher cooks avoid flours of any kind, to eliminate the possibility of eating the forbidden grains inadvertantly. I had to keep looking to find out why Matzo flour was allowed, when it is pretty clearly flour. Wikipedia shed some light on that question. The Jewish law that prohibits eating grains has a clause, the flour can not have touched water for more than 18 minutes, the time at which the resulting bread would be considered levened. So, Matzo is made from flour and water, but it is mixed up and cooked well before the allowed 18 minutes. This bread can then be ground up, made into flour, and used to coat the thinly sliced turkey breast to make Turkey Schnitzel. Of course, I've simplified the issue; debates continue about the use of Matzos made with liquids other than water, and other subtleties which are thoroughly examined on many websites. I was basically used to some foot fatigue, but Ihad to walk as fast as possible and get a lot of stuff done, all day long. From about 5:45am to whenever, I basically jog. My thighs ache, my calves ache, the bottoms of my feet and toes are sore, my shins burn. So, I am going to allow myself an extravagant purchase. The time has come for Nike Shox, for the end of the quarter rush to get everything done. These shoes spring me into the day. I got all black, so they're discreet. Good shoes can make the difference between a bad day and a good day; although sometime you have those crazy-haired days no matter what shoes you wear. something I have never tried before. I have been hearing good things about them lately, nutritionally speaking. Turns out they are ugly and small. I haven't determined yet if they need to be peeled, but I hope not, they are small and oddly shaped; they look really hard to peel. In cooking, I have found success by following recipes as closely as possible the first time I prepare them. But, I have been getting better at intuitive cooking. So, today I am wimging it with sunchokes. The name and appearance of these roots should turn anyone away. But I'm trying to be more adventurous. I am going to prepare a recipe like the one listed on this link, herb sunchoke au gratin. I have all of the ingredients, except that I am going to use rutabaga instead of potatoes. Any my thyme keeps dying, or getting eaten by bugs, so I only have oregano and rosemary, maybe cilantro. We'll see how it turns out.

**UPDATE: They do not need to be peeled, but they should be cooked thoroughly. This version turned out hard and dry. It was not good and most of it got tossed out...next time I will parboil them before I do anything.

Greens and Rice

<div class="separator" style="clear: both; I try not to call it a New Year's Resolution, because those are rarely kept, and hardly maintained. But, I try to eat better: less meat, more vegetables, I joined a CSA to get some inspiration. I wouldn't say the CSA is cheaper, and I probably won't do it for long, but it is more adventurous, it forces me to eat more greens than ever, and it reminds me that my ancestors ate these weeds, so they must be good for me. I get things like mustard weed, or was it mustard greens...whatever, its leafy, and it looks like it would grow in a crack of the sidewalk. But, I also get purple carrots, dwarf blue kale, kohlrabi, avocados and citrus. The avocados alone are almost worth the weekly fee. So, tonight I mixed up greens and rice, short grain brown rice simmered slowly with sauteed onions, swiss chard, spinach and kale. I threw in a couple cloves of garlic, fresh oregano, salt and pepper, and a little soy sauce. Serve with grated parmesian. Quick, vegetarian, hearty, and full of healthy vegetables. Load it up with brocolli, asparagus, artichoke hearts, mushrooms, sausage and/or shrimp. Its easy to make lots and it reheats well the next night.

Revenue Goals

As we approach the end of the quarter, I find myself constantly refernecing "the revenue goals". NOTE: follow this link, Endocrine System, for a great,
brief description of each gland, organ and hormone, with
     pictures.
5) Hormones control or participate in almost every aspect of life. They make us feel hungry, sad, euphoric, dehydrated, everything. (They don't make us feel pain, that is controlled by the Nervous System, a system that parallels the Endocrine System in function by providing the electricity to stimulate the production, release and use of the molecules in the body.) It is a 20th anniversary edition, and yet it is old, yellowed and has that bubble writing popular in the 70's. There are pages of rapturous praise, all lauding John Irving and the brilliance of Garp. I have made it to page 272, a little less than half way through and I'm not sure this is a book I want to finish. What am I missing? I have a lot of time to read lately and will probably find out how this thing ends. But, I hope something good happens. And by good, I mean sorrowful or soaring, let it be insightful. This is the kind of book that will soon be made into an Oscar nominated drama starring Leonardo DiCaprio. It is mellowdramatic yet somehow dull. It is slightly tragic, and perhaps liberating, but in a way that makes you feel oily. Why are so many books about louts who only think about sex? I'm not all that interested in what T.S. Garp has to say, but I suppose I will stick around to find out.

<div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; But then I find, that the reason I am not loving the book is exactly why people like it. "The story is decidedly rich with (in the words of the fictional Garp's teacher) "lunacy and sorrow", and the sometimes ridiculous chains of events the characters experience still resonate with painful truth." I couldn't have said it better, and in fact I didn't say it better. It's the "ridiculous chains of events" that I am not buying. If it is supposed to be ridiculous, then it isn't quite ridiculous enough. "Lunacy and sorrow". The reviews might be better than the book.

Lab Time

<div style="border-bottom: medium none; So, what's a girl to wear? Geek Chic 2.0. Computer Geeks and Gamers have defined Geek Chic for years. But, I am noticing a subtle shift from Computers and Gamers, to biologists and chemists. (Follow the link to see some great pieces found on Etsy). Perhaps the life sciences aren't replacing the Silicon sciences as a definition of Geek Chic, but rather there is room in the ethos for both types; niches within a niche industry.

Fun Stuff

<div style="border-bottom: medium none; It features mostly home-made things that people can sell directly, so the prices are great. I have never posted on Etsy, but I assume they manage the types of photos that people post, because they are all staged beautifully. I don't know how they keep the site so nice, but it still a pure experience (unlike Ebay). Today, they have an idea for a do-it-yourself Halloween project; shadow puppets. Nothing like the Saturn car parts challenge of last season. So, why are the designers playing it so safe. Every other season, the designers have been champing at the bit for a chance to express themselves in a full-on gown. Now, they have been given the opportunity several times, and I haven't seen anything too exciting.

On Thrusday, the contestants were honored to design for Christina Aguilera in the tradition of Bob Mackie.

First, lets look at Bob Mackie's style.

<a href="http://3.bp.blogspot.com/_yxc8no_ushU/StnRLpdtx9I/AAAAAAAAAJQ/vQYLJK8b6UU/s1600-h/Barbies.JPG" imageanchor="1" style="margin-left: 1em; After a quick Google image search for Ms. Aguilera, I conclude that she has rather simple tastes. Most photos show her in very revealing outfits, but they are largely solid colors, neutrals, small patterns, and a lot of skin. Skin seems to be her signature. So, given this challenge of marrying the King of Sequins, with the fleshy simple style of the star, what did the Project Runway designers come up with?

4 of the 8 remaining designers gave us floor sweeping yardage. And I mean yardage...

<a href="http://4.bp.blogspot.com/_yxc8no_ushU/StnUqj4StuI/AAAAAAAAAJg/3skrIetmAFc/s1600-h/ebony+in+shirin.JPG" imageanchor="1" style="clear: right; All in all, the designs were disappointing. Not one designer gave us headwear...which is a big part of Bob Mackie's aesthetic. Nicolas, Irina and Logan at least gave us some leg, of which we know Ms. Aguilera is a big fan. I think Nicolas should have won. He isn't my favorite designer, but I think he most closely met the challenge. His dress was appropriate, well made and stylish. It embodied three important qualities: it harkened to Bob Mackie's aesthetic, while still representing Nicolas's style, and it would flatter the wearer: one petite mega voice with a shimmy that should be seen for miles.

So, designers, listen up. It doesn't always work out, but it helps to have an idea of what I am making. Here is what I made last week:

Monday: Chicken breast tenders baked like so...spray a casserole with olive oil, douse chicken in Italian Salad Dressing and lay it out on the bottom of the casserole, top with rinsed garbanzo beans, artichoke hearts, and diced tomatoes. Top with dabs of Feta cheese all over. Pour more Italian Salad Dressing over. Bake about 20 minutes at 350, until chicken is cooked through.--I didn't serve this with any sides, because it was one of those days, but I could have served it with Orzo and wilted spinach.
Tuesday: Chicken Kiev with Bacon and Asparagus!!! Follow the link to the recipe courtesy of Food Network. Dear Husband prepared this dish. I made mashed potatoes, to which I added Kraft Spinach and Artichoke Cream Cheese and 1/2 & 1/2 (YUM). Nutritionally, this is not how we normally cook...But, there is a vegetable present. DH prepared this meal exactly according to the recipe using our cast iron skillet, and it could not have been better. Perfection!

Wednesday: Cajun Stroganoff...an on the fly creation. I marinaded about 2 pounds of London Broil using Emeril's marinade, then braised it until tender in the marinade plus 1 can of diced tomatoes. Cook penne pasta, or any shape, according to package directions and transfer to a large bowl. Whisk about 1 cup of plain fat-free yogurt with about 1 cup of the cooking liquid. Add to the pasta. Add steamed green beans, and diced pot roast and toss to combine completely. This dish comes out spicy, creamy and delightful.
Thrusday: Version of Shepard's Pie. Chop 3 stalks celery, 2 carrots, and 1 potato into large chunks. Boil the vegetables for about 5 minutes to soften. Drain veggies. Meanwhile, saute about 1/2 of a large onion in a dutch oven. Add 2 T flour and cook for approximately 2 minutes, add 1 1/4 cup water and 1 packet of Au Jus Gravy Mix, add veggies, 1 can of peas that you rinsed, and the diced pot roast. Stir thoroughly. Crack open a tube of biscuits and place each biscuit on top of the meat and vegetable mix to form a top crust. Bake at 350 degrees for about 20 minutes, or until biscuits are done.

Friday: Skillet Casserole with Rice, Sausage and Mushrooms. Saute about 3oz of Turkey Italian Sausage until browned. Add diced onions and saute until the onions are translucent. Add about 4 cups of chopped mushrooms, stir and saute until mushrooms are tender. Add 1 cup of short grain brown rice, stir and saute for 2 more minutes to toast rice. Add 2 cups of liquid (I used 1/2 cup white wine + 1 1/2 cup water), broth, worchestershire, etc. Bring to a boil, cover and reduce heat to low. Simmer until rice is tender, about 30 minutes. Add 1/2 cup shredded Sharp Cheddar Cheese and stir to combine. Optional additions can include fresh sage, parsley, parmesian, pepper to taste, bell peppers, or spinach.
Enjoy!

Remarkable Read

100 THINGS TO DO WHEN YOU ARE UPSET, by Galadarling.com. Out of the 100, probably 50 include buying something...which I try not to do when blue. The one purchase that I say is OK, especially if you coincide it with an interview, or a date, or something where you should look fab. by Gwyneth Paltrow. Her website is put together very well and it is not like any other website out there. Unfortunately, she doesn't post very ofter. It says once per week, but it is only one topic once per week. However, it is quality stuff. I noticed a new recipe that I am going to try, Bibimbop. I don't know what Bibimop is, but I gather it is a Japanese rice bowl with veggies and a new sauce. Gwenyth's recipes are very hard to make, as she has the strangest ingredients. But, I live in the city and should be able to find this stuff. I will let you know how it goes.

<div class="separator" style="clear: both; It reminds me of when I was that age...I would wear anything. I got all my clothes at thrift stores, so there weren't any Christian Siriano skirts in my closet (like Tavi is wearing in the picture to the left). But, my favorite outfit was a brown polyester dress with a checkered peter pan collar. The dress had 6 inch cowboys all over it, actually, I think they were cowgirls and they had lassos that went all over the dress. I would pair it with black and white striped tights and wooden ski boots. Now that I am nearly 30, I tend more towards the outfits on another one of my favorite reads, Fell4Fashion.

National Punctuation Day

I have no idea whether or not it really is National Punctuation Day, but the Huffingtonpost these unstable, plunging, depressing, shocking, bursting times. Every where you turn there is a commercial about working together through the current economic hardship. Corporate America is letting us know they hear us, they feel us, they are just like us.

I live in Southern California, where These Times are not only evident, but prevalent. There are stories every where of people being unemployed for months on end, no health insurance, and a massive mortgage breathing down their necks every month. The main stream media has latched onto the metaphor of swimming: above water, under water, sinking, treading, on and on.

My husband and I have made a valiant effort in the last couple of years to reduce our debt and get to a comfortable place, an umbrella under which we could stay out of the rain. I have learned to accept some flaws, and work to change others. All of the things I have learned since 1999, have given me the confidence to know that all I need to do to survive These Times is remain calm and breath. is a green sauce from Argentina that is now popular all over Central and South America. If you follow the link, or Google Chimichurri you will get a lot of different recipes. Here is one that I made recently that came out to be delightful.
1/2 c. cilantro (use parsley if you don't like cilantro)
6T balsamic vinegar
2T olive oil
2 garlic cloves
1T chipotle steak spice mix (the link isn't the exact one I used)
1t dried oregano
1t McCormick Montreal Steak Spice

NOTE: it is not necessary to buy both types of steak spice listed above. Use 1T of whatever spice mix you already have, it should be peppery. Add salt if the mix does not have salt.

Combine all ingredients in a food processor or blender, except olive oil. Slowly add the olive oil while the processor is running after all other ingredients have been combined. Store for use later, or use it right away to marinate steak, chicken, pork or shrimp.
I used the sauce to marinate chicken tenders for approximtely 6 hours, reserving 1/2 of the sauce for use later. I cooked the chicken in the oven, 350 degrees. Along with the chicken, I roasted zucchini, onions and carrots that had been tossed in olive oil and chipotle steak spice mix. I also prepared ouzo pasta and tossed it with about 3T of the chimichurri sauce.
For presentation, I put the ouzo on the plate and stacked the veggies and chicken on top, then spooned a few tablespoons of chimichurri sauce on top. It was scrumptuous and balanced.

Today's Quote

"Common looking people are the best in the world: that is the reason the Lord makes so many of them." --Abraham Lincoln

Remarkable Read

Here is a link to a new blog I found, IowaGirlEats.
It is full of recipes, running tips and stories, and travel. I especially like the recipe and am going to try the sweet potato fries recipe. That is how I make a lot of my vegetables. Chop them, put them in a sealing bag or large plastic container. Pour olive oil over them, add your favorite dry seasonings and spices. Roast at 400 degrees on a foil lined baking sheet that has been sprayed with non-stick spray. Toss them once while cooking to get both sides roasty. said that Alex's Red Barn is one of the best in the valley. Well, I think that wine is good if you like it, if not, it's not so good.

<div class="separator" style="clear: both; I tried Viognier, a light white varietal that I have never heard of. It was very pallatable, but it didn't excite me. After, came the Old-vine Sauvignon Blanc, a fuller bodied white. It was also good. I don't drink white wine much, so they were both fine, but nothing I would buy a whole bottle of. Next came the Grenache. It was very interesting. It is a red, but a really wimpy one. I think this was my second favorite of the day. It is wimpy in a good way, very drinkable, summery, not sweet necessarily, but mellow. Robust enough to go with a lighter beef preparation, maybe a beef salad. This was followed by a Old-vine Cabernet Sauvignon which was my least favorite of the red wines. It was very dry, but doesn't burn the mouth at all. Next up, was their Syrah. This is a pretty bold red, peppery, full of flavor, and delightful. The set was finished with a Solera style Sherry, aka cream Sherry. This tastes somewhat like cream soda mixed with Brandy. It is mild and drinkable, but only in little sips. It might be nice with some fancy vanilla bean ice cream, or that might be overkill. Maybe it would be nice with orange slices, or broiled grapefruit...a play on the old Creamsicles.
<div style="border-bottom: medium none; Fruit kabobs with mint. Fresh gingersnaps with lemon sorbet. Crudite with two dips. Sparkling lemonade with, or without, Lemoncello. Wine: Wilson Creek Sauvignon Blanc.

I decided to wear an ankle length skirt, a white T-shirt and bright coral colored sash instead of the oxblood tunic so that I wouldn't get too much sun. When I first start at a company they usually start with a day or two of orientation to read the Employee Handbook, sign forms, and come to speed on policies and procedures. Here you learn that "it is preferred that you wear long pansts and long sleeves, although that is a suggestion for your own safety, and not a mandate."

I thought some of you out there might be in a similar position. But, we're still required to look office appropriate. Here are some outfit ideas that I put together using one common item of clothing for three weekday looks. Each outfit should contain close-toes shoes, good coverage, and office-ability, while maintaining its usefullness in the lab setting. A place where the clothes might encounter bleach, acids, biohazards, or flames. You have to image it, as I am not going to model. These are my real clothes and shoes, and no, I didn't iron them. Please vote in the poll to the right.

AAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAA
<div style="border-bottom: medium none; From what I can remember, she was born in 1919. I always marveled at her resilience and determination. She lived through both World Wars, the Depression and the silicon revolution. She was the kind of woman who kept gold coins underneath the false bottom of the broom closet. She was a vegetarian. She was a political activist. She had a wood burning oven and a hot plate and she washed all her clothes by hand in the kitchen sink. By choice. She was a member of her local community garden. The members all shared the harvest, and then donated any left-overs to the local soup kitchen. How beautiful a notion.

I'm not really much of a gardener. Most of the plants I own, or have owned, have experienced the slow march towards mulch as their leaves turn brown and desiccated. And yet, my favorite class, ever, was 7th grade horticulture. We all got a triangle of land, seeds and tools. We got to take home everything we grew. I was 12 years old, sitting on the bus with a grocery bag full of kale, beaming with pride, because no one else had a bag of vegetables that they had grown. We made cheese, butter, and ice cream from fresh cows milk. We made sun-dried apple chips.

My forebearers have all kept gardens. But they all lived in the country. I live in sunny Southern California, where red tile roofs and peach stucco houses are found in neat rows along every visible ridge line. A place where I recently watched, while I sat in my SUV on the freeway, an estuary being filled in with dirt to make room for a new neighborhood.
